Initial work into multiple server versions support.

Currently supports PaperMC 1.21.X and CraftBukkit b1.7.3.

Node attackWithItemInHand does not work on b1.7.3.

Adds nothing to 1.21.X, if I introduced any new bugs you're better in the previous version.
