Add Oritech, Simply Tools, CraftPresence, and Athena CTM

• Added Oritech (Mekanism didn't full fit into what I wanted this modpack to feel like).
• Added Simply Tools (paxels and hammers was wanted. This was part of the reason Mekanism was added in the first place)
• Added CraftPresence (Discord Rich Presence integration. Why not?)
• Added Athena CTM dependency for Oritech (I originally forgot to pull down the dependency for Oritech here)
• Fixed Athena environment detection (I ran into a wierd issue between Modrinth API calls and my script where it was messing up the env settings for Athena. I manually pinned the env settings )
• Updated performance mods: EntityCulling 1.7.5 → 1.9.5, fixed Clumps/ImmediatelyFast/Ksyxis
• Removed Mekanism and all dependencies (4 mods)
• Left KubeJS/EMI scripts as infrastructure for future server admin item management (this may be used in the future by myself, but I wanted to point this out so server admins can use it if they want as well)
• Updated Sodium performance settings
