A cross section of a basic airship: a lit campfire under an intake hole, airship feet for landing, a ghast drive for thrust, sealed wool envelope. You can put a ladder on the side of the blimp feet.
Ship's Binnacle
You can add a binnacle (ship's compass) to your ship. It works as an ordinary compass, so always points north.

Find a mostly intact, upright wreck.

Floating, but still awash. Fill it with sand, clear the sand.

Repair damage, and stop the ports with glass or wood

Click the helm again, and it floats properly. Make a door at the stern, or add a ladder up the side.

Remove the thick booms from the mast, add ladders to the masts, and sails.

Kit it out with a flag, bed, workshop, and dinghy, and sail off.

Build the portal frame, partly immersed. On the nether side, this is a lot more survivable with fire resistance potion.

Now clear the sand. The water or lava blocks should stop just short of the portal surface. Note, the matching portal has to be of similar size, immersed in the same way.
