You can set custom motd's in the config and simply center the text.

Custom Maintenance mode Motd
This motd activates when the maintenance mode is on. this motd works the same way as the normal motd included in the config. also the maxplayers will be set to 0.

Players will have a custom kickmessage when the server is in maintenance mode.
