Inverts depth check to work for 26.2, no content changes

• Re-added missing particles config options

NOTE: This is the first version of Elytra Contrails for Minecraft 26.1, and there may be some issues with trail rendering. Please let me know if you find any!

Known issues: Translucent trails overwrite cloud rendering leaving a "gap"

MISC ADDITIONS AND CHANGES:

• Changed the config to use my own GSON serializer instead of cloth config, meaning that people can use the mod without cloth config, they just won't be able to edit the config in game (will require changing the file)
• Cleaned up light texture computation
• Extend player trail rendering to work on Mannequins
• Fix other "poses" causing trails to disappear (such as sprint swimming) by directly check for FallFlying instead of using pose

NOTE: Unless major bugs are found, this will likely be the last Elytra Contrails version for minecraft 1.21.11, as I move on to 26.1
