Adds 26.1 support

Stellarity was archived for what, 2 months? Anyways, Stellarity is back, again! This project will now be maintained by a new team under Amber since kohara is no longer maintaining both versions of Stellarity. This change will give both the datapack and Enlightened a better chance of survival, and gives ADJ more attention (which you should download). Support has also been moved to a new server, which you can join using the links on both CurseForge and Modrinth.

Updates to 1.21.11, no additional features. Check out enlightened for heavy Stellarity development there.

All this release does is attempt to migrate to 1.21.9/10.

Nothing new was added, just simply version dropping and support.

This is an alpha. Not official 5.0.0 as there can be extremely breaking changes, but felt like posting here as a midway progress check you know?
