Port to 1.21.1!

Added optional ruin processor + config option (disabled by default)
Moved all other existing config options to structure rule processors
Removed End Remastered's End Gate from vanilla advancement
Replaced waterlog processor with new liquid_settings option in structure json
Now uses new Enhanced Terrain Adaptation from YUNG's API to guarantee the stronghold is buried
Removed unused config entry in structure json
Updated config readmes
Updated all structure NBT files
