YUNG's Better Strongholds

Port to 1.21.1!

• Added optional ruin processor + config option (disabled by default)
• Moved all other existing config options to structure rule processors
• Removed End Remastered's End Gate from vanilla advancement
• Replaced waterlog processor with new liquid_settings option in structure json
• Now uses new Enhanced Terrain Adaptation from YUNG's API to guarantee the stronghold is buried
• Removed unused config entry in structure json
• Updated config readmes
• Updated all structure NBT files
